Recipe | Sweet Potato and Courgette Harissa Wrap

The other day, I posted a Sweet Potato and Courgette recipe, taken from Delicously Ella’s cookbook. Usually when I make this, I tend to have leftovers sitting in the fridge. Personally, I think that the stew tastes so much better the next day, and enjoy it a lot more!

Normally, I just reheat the food and have it for dinner, but seeing as my mum took some for her lunch, I only had a tiny bit left. Of course I still wanted to make use of the remaining leftovers, and so decided to make a tasty wrap.

As I have already posted a recipe on the stew, I will link it here. Below I will link the ingredients for this wrap.

Sweet Potato and Courgette Harissa Wrap

Ingredients

  • Sweet Potato
  • Courgette
  • Onion
  • Garlic Cloves
  • Broccoli Stems
  • 1 tin Chopped Tomatoes
  • 1 tin Coconut Milk
  • 1 tsp Hot Paprika
  • 1 tsp Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Chilli Flakes
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Maple Syrup
  • Olive Oil
  • Harissa
  • 1 Wrap
  • 1 Romaine Lettuce
