Red Pepper and Tomato Soup

Red Pepper and Tomato Soup

  • 2 Red Bell Peppers
  • 3 Tomatoes
  • 2 Garlic Cloves
  • Olive Oil
  • 1 tsp Oregano
  • 1 tsp Paprika
  • Salt
  • Pepper
  • 1 Cube Vegetable Stock
  • 2 tbsp Tomato Puree
  • Coconut Milk Optional
  • Seeds Optional


  • Cut, and Deseed the Peppers. Slice into small pieces.
  • Grab a Saucepan, drizzle in some Olive Oil, and add in the sliced Peppers. Cook on a medium heat until soft. I usually cook mine for 5-7 minutes.
  • Next, add the crushed Garlic Cloves. Sprinkle some Salt, and Pepper over the ingredients, and stir. Cook for a further 5 minutes.
  • In the meantime, begin to chop the tomatoes into chunks. Add to the saucepan.
  • Add in 1 tbsp of Oregano, and Paprika. Mix well, and allow the flavours to really soak up together.
  • Boil the kettle, and grab a jug for the boiled water. I fill my jug up to 3/4 of a pint. The thickness of the soup will depend on the amount of water added. I don't like my soup too thick, or watery, and find 3/4 perfect. Add in the Vegetable cube.
  • Stir the stock, and add into the saucepan. Bring to the boil, then leave to simmer for 25-30 minutes.
  • Transfer the ingredients into a blender, and blend until you are happy.
  • Serve into a bowl, and enjoy! If you wish to add in any extras, then the more, the merrier! I tend to add in a small amount of Coconut Milk, and sprinkle some Sunflower/Pumpkin seeds on top. Corriander is good to add too!
